It is supposed to be Sun-dried fish but it is perfectly ok to dry them in the fridge without clingfilm over the fish.

It is supposed to be Sun-dried fish but it is perfectly ok to dry them in the fridge without clingfilm over the fish.
Ingredients
  • Fresh mackerel 4 whole fish
  • Sea salt 2 ~4 tsp
  • Toasted sesame seeds 1~2 tbsp
  • For Mirin marinade sauce :
  • Light soy sauce 120 ml
  • Mirin 100 ml
  • Sake 50 ml
  • Sugar 1 tsp
Instructions
  1. Gut the fish and fillet it or open them like kipper.
  2. Spread the sea salt all over the fish then leave them over a flat mesh with a tray or on a plate in the fridge for one hour.
  3. Make the Mririn sauce while waiting for the fish to firm up in the fridge. Put all the ingredients for the sauce in the saucepan then heat it up until it brings to the boil then simmer it for a minute or two.
  4. Turn the heat off and let it stand to cool down.
  5. Wash the salt from the fish then wipe them with kitchen paper.
  6. Lay the fish in a flat tray which is big enough to lay 8 fillets then pour the Mirin marinade sauce. Leave them in the marinade for few hours or overnight as turning them over time to time if the fillets are large.
  7. Take the fish out from the sauce then wipe the excess sauce with kitchen paper.
  8. Place the fish on a large clean plate and sprinkle them with the sesame seeds.
  9. Put them back in the fridge without a clingfilm for few hours or overnight. If you have a fine mesh container which protect the fish from any flies or insects but let the breeze go through, it is the best using it to make Sun-dried fish. However, it is perfectly ok to make an instant dried fish fillet in the fridge over few hours. Umami flavour will be condensed and the fish change to bouncy texture.
  10. Sauté them in a pan or grill them then serve with freshly grated ginger.
