Here is a quick noodle recipe with homemade ‘Men tsuyu’.   You can use Soba noodles or fresh pasta.

Here is a quick noodle recipe with homemade ‘Men tsuyu’. You can use Soba noodles or fresh pasta.
  • Udon noodles 2 bunches
  • Spring onion 2
  • Shiitake mushroom 3
  • Egg yolk 2
  • Nori seaweed ¼ sheet
  • Ginger small piece
  • Sesame oil 1 tsp
  • Homemade ‘Men tsuyu’ 2 tbsp
  • Sea salt and black pepper to adjust the flavour
  1. Boil the noodles for required time.
  2. While waiting to cook the noodles wash and slice the spring onion and Shiitake mushroom thinly.
  3. Peel and grate the ginger and cut the Nori sheet into match sticks thin.
  4. Heat the frying pan with sesame oil then add the spring onion and the shiitake to stir-fry very quickly for half a minute then turn the heat off.
  5. Drain the noodles well and add them to the frying pan with the spring onion and mushrooms.
  6. Add the egg yolks and ‘Men tsuyu’ into the pan while the noodles are still hot.
  7. Break the egg yolks as you stir with chopsticks and mix with the noodles well.
  8. Adjust the flavour with salt and black pepper.
  9. Garnish with some grated ginger and Nori seaweed on top.
