Home-made Ponzu 001手作りポン酢Home-made Ponzu 001‘Men tsuyu’ is a versatile soy sauce.  it is a basic sauce and delicious to use as any type of seasoning.  It was originally used for noodles, therefore ‘Men’ = noodles and ‘tsuyu’ =soup.  We used to make this soup stock or sauce at every household instead of buying ready- made ones.  It is not difficult to make once you get hold of the ingredients.  The taste is much more natural and you will be happier and a little proud (?)to use your own homemade one without any unknown additives.  The ingredients can be found in any health food shops or oriental stores.  If you can’t find ‘Katsuobushi’ bonito flakes, use dried Shiitake mushrooms instead.  ‘Katsuobushi’ has a subtle smoky flavour and it’s perfect to use with Kombu seaweed.  However, the Shiitake also gives added rich flavour to Kombu seaweed stock.   By the way, you don’t need to use expensive Mirin.  A little sugar with Sake will give almost as delicious as Mirin flavour

‘Men tsuyu’ is a versatile soy sauce. it is a basic sauce and delicious to use as any type of seasoning.
  • Sake 100ml
  • Sugar 1~1 ½ tbsp
  • Soy sauce 100ml
  • Water 400 ml
  • Kombu seaweed approximately 10 x 20 cm
  • Katsuobushi bonito flakes a small handful or Dried Shiitake mushrooms 4 or a few sliced ones
  1. Pour Sake and sugar in a saucepan then bring it to the boil to get rid of alcohol.
  2. Pour soy sauce and water into the pan to boil it again.
  3. Turn down the heat then add Kombu and Bonito flakes or Shiitake mushrooms.
  4. Simmer it for a minute then turn it off and let it stand to cool down.
  5. Filter the sauce with a fine colander and keep it in a bottle in the fridge.
